NATO vs SCO who would win?

It almost certainly depends on where the fighting would take place. If its on an SCO-member's soil, the SCO would likely win. Otherwise, I believe NATO would win by virtue of the power-projection ability of the United States (and, to a lesser extent, that of the UK and France).
